Hey! So, it's been a while since our last post, but we have stocked up and found a few healthy recipes that are perfect for our blog. First up is sugar free pancakes! Here's how to make this delicious breakfast.
Ingredients:
2 cups of self raising flour
1 1/3 cups of milk
2 eggs
1 teaspoon of vanilla essence
1 tablespoon of butter (to coat the bottom of the pan)
For equipment, it's:
A medium frypan
Measuring instruments
Whisk
Spatula
Mixing bowl
Jug
Sifter
Here we go:
1. Mix eggs, milk and vanilla essence in a jug with a whisk.
2. Sift the flour into a mixing bowl.
3. Add wet ingredients to the mixing bowl and whisk until there are no lumps in the mixture.
4. Pour mixture into the jug and leave it in the fridge for 15 minutes, to stabilize the mixture.
5. Heat the pan and coat the pan lightly with the butter. (Note: You will have to adjust the heat to get it just right for your stove.)
6. Coat the bottom of the pan lightly with the mixture. (Note: We usually use about 2 tablespoons.)
7. Cook on one side until bubbles start to rise in the mixture.
8. Lift the pancake slightly with the spatula. When the pancake is golden brown on one side, flip it over.
9. Cook until both sides are golden brown, then transfer it to a plate.
10. Repeat steps 6 - 9 until you are satisfied with the amount of pancakes.
And that's it for the pancakes! We often like some sort of topping, whether it be fruit or maple syrup. Here's a recipe for a seasonal berry compote to smother your pancakes in. It really is delicious. Here's how to create your masterpiece:
You'll need:
2 cups of diced seasonal berries (Blueberries, Strawberries, whatever you like)
1/2 tablespoon of butter
2 tablespoons of lemon juice
1/4 of a cup of Maple Syrup
Equipment:
Wooden spoon
Metal spoon
Small frypan
Measuring instruments
How to create your yummy pancakes:
1. Place the berries into a small frypan, with half of the butter. Warm gently whilst mixing with the wooden spoon until the berries start to break down.
2. Add remaining butter. As the sauce forms, slowly add the maple syrup. Once this has all come together, add lemon juice to taste.
