Pina Colada Ice Blocks for Kids

As Spring is here and sometimes it already feels like Summer, today Mum and I made some Pina Colada ice pops....especially for kids! It is as easy as can be and much yummier than buying sugary ice blocks.

Here is our recipe:


  • 1 tin pineapple and juice from tin
  • 1 tin lite coconut milk
  • 1/3 cup coconut water
  • 1/3 cup honey
  • fresh pineapple - usually 2 bits per ice block

Blend together and freeze and eat...scrumptious.

We use any leftovers to make ice cubes to put in our smoothies.

Pizza muffins

Hi everybody, this is recipe number one. My mum got this recipe from the website Not Just a Mummy.

Here is our spin on the Pizza Muffin recipe:

Preheat the oven to 180 degrees Celsius. Get the following ingredients ready:

  • 1.5 cups of mozzarella cheese
  • 1/4 cup parmesan
  • 1/4 cup feta (optional)
  • 1.25 cups of wholemeal flour (trying spelt)
  • 1 cup spinach leaves (chopped)
  • 1 egg
  • 1 cup low fat (not skim) milk
  • 1 tsp baking powder
  • Pinch of garlic flakes, dried basil, dried italian herbs, pepper to taste
Then, just mix all the dry ingredients together in one bowl and all the wet ingredients in another bowl and then mix together. Spoon into a muffin tray lined with patty pans.
Now just bake for 30 minutes and let cool for 5 minutes before really enjoying...mmmmmmmm...they were delicious.

We love pizza muffins!


Next time we are going to add pineapple pieces and not use patty pans as they stuck to our muffins.

Tara and Megan's Adventure into Healthy Recipes

Tara and I start our adventure to rosy cheeks, through healthy recipes (and eating of those delicious recipes) today! Our first adventure has been to look at other yummy recipes on the web and put together a list for shopping.

Our 1st Rosy Cheeked Shopping List:
  • Wholemeal spelt flour (organic if possible)
  • Raw cacoa
  • Organic cocoa powder
  • Coconut oil
  • Vanilla Extract (yet to find one without so much sugar so we bought vanilla pods instead)
  • Honey
  • Real maple syrup (an alternative to rice bran syrup)
  • Cacoa butter
So what do all those ingredients make...pizza muffins, homemade chocolate and hot chocolate as a start(but not all at once). We have all the other ingredients we need in our pantry already so that is really good. Now on with the cooking...report back later.
